Frozen carrots that are cut into the circles dehydrate down to about the size of a pencil eraser. They plump up nice when rehydrated and you can’t tell the difference. Some veggies seem to work better than others.
I’ve gotten a lot of flour sugar, stuff for scratch cooking, something like bullion cubes, evaporated milk, yeast, can veggies you can throw together all kinds of soups. I ordered powdered eggs and butter, biscuits and gravy, homemade beans, I have done some canning, of meats and made some spatgetti sauce for canning. Think camping, I got a dutch oven-good for cakes and breads.

I am inclined to say that having both dried beans and canned beans would be ideal for food storage. Canned items typically do not last as long. Another fact is that you can also sprout dried beans and it increases the nutritional value. Wheat can also be sprouted, ground into flour to make bread and cooked to make a hot breakfast cereal. Wheat, if stored properly can be stored up to 25+ years. I personally like to have a variety my food storage.

I would like to add something, not necessarily to the list, but more like “food for thought” ideas that could very well save you and your family’s life. Living in the South, you “will almost” grow up around some natural disasters, whether it be a hurricane or tornado, most of us here take “prepping” very serious..and we learn a lot from those disasters also (I.e. Hurricane Katrina). I grew up around great-grandparents, grandparents, parents, other relatives and friends, who have a garden, almost for the entire year. Learning to can and freeze food was as natural as brushing your teeth! During the summer, when school is out, we shelled peas, shuck corn(yeah say that fast!), canned beans and tomatoes, picked berries, smashed berries, and, on occasion, churned butter! I wish I had a dollar for every pea I shelled! I be richer than Midas! Knowing these “techniques” can make a huge difference in feeding your family for several months without electricity. There have been lots of times when we would get lunch or diner straight out of the garden, washed and prepped, cooked, and on the plate in a couple of hours. No storage. No refrigeration! Scraps of food went into the garden or compost. And you can cook this stuff straight over an open fire. Two words…”cast iron”…it is a very good investment…it is great to use anywhere…open fire or stove! You don’t have to wash cast iron(I know it does sound gross, but believe it or not, that is the “beauty” of cast iron)..you wipe it out and keep it seasoned. You can cook anything in cast iron, from biscuits…to a cake! People with cast iron can cook almost forever! I would view it as essential. Enough about the garden.
We thought about the generator / gas dilema for our filled 2 freezers, and decided to start our venture into solar with generating enough energy to run those. So far so good.We know that as long as we can run them for 12 hours a day, the food inside stays well frozen and safe. New England winters are cold enough at night that it keeps the garage cold where the freezers are, so thats a help. If we only open the freezer long enough to take out enough food for a few days, they can thaw in the fridge and that helps too. I love my freezer, lol.

Put dry ingredients in a bowl and sift through. Add liquid and knead for 5-10 minutes. Let dough rest in bowl covered for at least 10 minutes. You can wait a few hours even if you get distracted. Knead again for 5 minutes. At this point you can leave your dough until later or you can shape or roll it out and fill it and let rise for 30 minutes to an hour before baking.
One item you must have is jug or two of plain, unscented, regular bleach and an eye-dropper for precise measurement. Adding one part bleach to nine parts water makes a great disinfectant, but more importantly you can add 16 drops of bleach to a gallon of water to kill germs in an emergency. It has other obvious uses for hygiene, and is too cheap to not have handy for such an occasion. Just keep in mind that bleach has a short shelf life, not the first thing you’d want to stockpile. Get more than one water filter, such as the ones made by Sawyer or Berkey.
It doesn’t even take something exotic like Ebola. A bad strain of the flu could overload our medical system and push society to the edge of collapse – and maybe beyond. Preparedness is going to be essential in any kind of major outbreak. Expect stores to be quickly emptied by panic buying, and then probably looting; hospitals won’t be able to cope, and everyone will be forced back onto their own resources. That’s why it’s vital to have those resources.
With freeze dried foods you can get a good selection of nutritionally balanced foods and they are easy to carry, even if you have to bug out. They have a very long shelf-life of up to 25 years. The only drawback is if you don’t have water, you can’t rehydrate your food. Plus, it is ideal to have warm water so you can have a warm meal, so if there is no way to heat your water, then you will be eating a cold meal.
Grains. Grains are good for making flour or meal. Wheat and corn are the most common. Bear in mind that you will need a grain mill to process these, and I recommend a good hand mill in case power is an issue. By storing whole grains instead of flour or meal you drastically increase storage life. Again you can buy these in ore-sealed buckets, or repackage bulk purchases yourself to save money. If you want to increase the shelf life even more, you can turn them into flour and then into Hardtacks.
Probably one of the very first things you have ever heard about prepping is that you have to store away large quantities of food. This needs to be prepper food that can be stored away for the long-term, perhaps enough food to last for six months to a year or longer. But what kind of food is this? Have you ever wondered if there is specialty prepper food? The answer to this question is yes and no. Confused? It’s actually more straightforward than it might seem.
Also, I’m not a big fan of eating canned food if I don’t have to. I feel it comes with chemicals and has less nutrients. However, in certain situations, it’s better to do that than starve. It definitely stores well. I like to keep beans and seeds around to sprout when I need them. Sprouts are highly nutritious and it fits better with my taste buds as I eat mostly fresh foods; although I am also keen on the beans and rice idea and I always stockpile 3 months of organic oatmeal if I can. Another thing I do is buy carrots and cabbage in bulk and leave them in the refrigerator as both veggies last a long time and you can eat them for at least a month if not longer. Onions are also a decent vegetable for lasting for a duration and when they start to sprout you have yourself some green onions instead. Potatoes also last fairly well. If you buy spaghetti squash and pumpkin in September, it will usually last until February.
Clothing and Footwear- Appropriate to your locale and weather. Aside from being able to dress to the environment and weather conditions, you should consider practical utilitarian clothing that will help you succeed. Tough, breathable, flexible, quick-drying clothing paired with gloves and sturdy boots or hiking shoes will help you negotiate dangerous man-made or natural environments and give you a degree of protection against incidental scrapes, pokes and slices.

We love this Mag-Lite XL200 LED flashlight because it’s tough and has multiple modes including SOS and dimmer timer. It’s a good idea to have crank-powered flashlights as well. And make sure you have candles, like this pack of six 115-hour emergency candles.
Food Supply- Non-perishable, calorie-dense food is the rule of the day. Variety is fine so long as it will keep for extended periods. Here you can go with either dry staples, like beans, pasta rice and flour, or canned or foil-pouched foods, like meats, veggies, fruits and stews or soups. Canned and pouched items are also conveniently ready to eat after opening (don’t forget a few can openers). Consider adding drink mixes like electrolyte powder or Kool-Aid for energy and some variety.
A former army base that was decommissioned in 1967, Vivos xPoint claims to be the largest survival community on earth. Survivalists' concerns and preparations have changed over the years. During the 1970s, fears were economic collapse, hyperinflation, and famine. “My first thought was to get my kids and us dressed! And then it was, “Crap! Close the windows!” We have no car here, and nowhere to go, so we were going to shelter in place. As far as I know, we aren’t near any military installations or big cities (we are staying outside of Kona). And then I started thinking about what supplies we have here- which isn’t much at all. I think the FaceBook comment, “the electric company knew days in advance the ice was coming and THEY did not prepare.” perfectly demonstrates Mr. Martenson’s approach…..”the ‘Crash Course’ was the problem definition….but, “the book, Prosper, is the solution space.” Some saw the ice storm coming, but seemingly did not prepare (mentally, physically or spiritually); expecting the electric company to make it somehow disappear…..(normalcy bias?)
Staying cool is a real concern in many parts of the country. I like to say we left for our long-haired dogs' comfort during one lengthy summer power outage, but I was as miserable as they were. We now keep a stash of battery operated fans on hand, clearly labeled in a box in the basement so I can find them easily with a flashlight. It's nothing like having AC, but prop one in a window and it makes a big difference. Speaking of dogs, you can follow their lead. Heat rises, so stay in a low position, Martin saiys. “Think about how a dog will dig down into the earth to get cool.” I might not go that far for a temporary power outage, but in that same vein, anyone with a basement could head there. “They stay pretty cool year round,” Martin adds.

Imagine the chaos if a freak wet spring devastated the US wheat crop. That’s a real risk; it’s happening in France right now – but France can replace its crop with imports. We can’t.
The problem is, to most people in Hawaii, this was another example of an inept government sending out false alarms. We get them about Tsunami’s a couple times a year… When the alert went off on my phone, it seemed disconcerting. Clearly, I wanted more information, so I turned on the local news TV channel. There was a football game on. I tried other channels. Regular programing. I tried CNN. They were complaining about the President.
For younger folk panicked by Trump, best they read books now out about him; a few written by actual conservatives and by persons who actually have known him for 40 or 50 years. After three days eating very little vegetable matter, I was thrilled to dig into Thrive Life’s Tuscan Quinoa Bowl, which included a ratatouille-like sauté combining asparagus, zucchini, and diced tomatoes. The cooking process felt kind of like a science experiment— you fry dehydrated garlic bits in oil, then pour in the dehydrated vegetables and seasoning along with a cup of water—but the result actually tasted like something I might cook at home, minus the strangely firm consistency of the vegetables.
