That leads to forget about being totally self sufficient, it won’t happen. There are things you need aside from food, but even just food, nobody can produce all they need unless they live in the perfect environment. Going into the great outdoors and becoming the great hunter… not happening either. Even skilled hunters and fishermen will starve because there are too many looking to do that. If you are like us and have ponds, therein lies 1 solution, stock it with fish.
Of course, each of us should prepare for poor health, loss of job, loss of home due to local conditions, but you have support systems in place for localized problems. The area where I live was burned out four months ago. Over 1,000 homes were either destroyed or damaged. People have moved on. Reconstruction has started. Road are being cleared of mud and debris. We may have more local devastation, but it won’t affect 99.99% of the folks reading this post. An atomic attack, an EMP attack, a CME burst from the sun over a widespread area, a 1918 type of flu epidemic, all of those things will affect 99.99% of those reading this post. I don’t think those are bogus in the least nor hype just to get readers on this list. I sincerely hope that you re-consider your position that they are just hype to get readership.
Wheat can be cooked as is but most people will grind the wheat for flour. My favorite manual grain mill is the Wondermill Junior. Grinding flour is hard work, so you will probably prefer an electric mill, too. Wondermill and NutriMill both make very good electric mills in the lower $200 price range. I found my electric mill in a second hand store for about $30, so you might also start checking places like Goodwill and even online — Craigslist or eBay.
Label everything with the date of purchase.  Sharpie pens were created for this purpose.  However you choose to keep track,  rotate your stored food items the best you can without getting paranoid about it.  Many of the “use by” and “best by” dates on canned and packaged goods are put there by the manufacturer but relate more to taste and texture than actual spoilage.  See the next item.

Nasal airways, occlusive dressings, decompression needles, IV lines and solution, splints, suture kit etc. You must have appropriate skills to utilize these items without causing more harm. I think the author adds in the high processed food for variety. He clearly states that the stew would be for a time when you couldn’t cook a real meal. some of the others could be eaten in an emergency when there was no way to cook such as the ravioli ect. Not all SHTF situations are world ending, You could simply have a power outage and no alternative cooking method
Flours are tricky to substitute and get the right texture. The recipes above use unbleached white flour. If you want to add in wheat or other grains then just be aware that the more heavy grains you add, the heavier the texture. This is why when doing pizza crusts or similar, a lot of people will use half white and half wheat at most for their crust. Any more whole wheat and the crust can just seem too heavy.
18.  5 pounds of Coffee or 100 Tea Bags.  There are those that will say that life without coffee is not life at all.  Whole bean (assuming you have a hand grinder), ground or instant – take your choice.  Or substitute tea.  Green tea and many herbal teas are quite therapeutic so if you like tea, this may be a good way to go. While I’m a big fan of mylar bags and 5 gallon buckets, since my family is just two folks (unless extended family make it to the house in an event), I package things up in 1 gallon mylar bags before placing into the buckets. Allows me to open less food at once to the elements. Sure, I have gamma lids to apply afterwards, and the mylar bags I use have ziplock style tops for resealing, but the less I open to the elements at once the better it will last. To further extend shelf life of opened bags, I have a large supply of small silica gel packs that I can toss a few into open dry good bags. Once I finish the bags I can reuse the packs by gently heating in my Sun Oven.
